Ingredients:

  • 6 large egg yolks
  • 100g granulated sugar
  • Double Chocolate pudding
  • 3 tbsp very good quality cocoa powder
  • Pinch of salt
  • 500ml milk
  • 30g very good quality cocoa powder
  • broke into small pieces
  • 30g unsalted butter
  • 1 ½ tsp pure vanilla extract

Method:

  • Beat the egg yolks and sugar until pale and thick in the bowl of an electric mixer fitted with the paddle attachment on a medium/high speed. Lower the speed and add the cornflour, cocoa powder and salt.
  • Bring the milk to boil in a medium saucepan and slowly pour the hot milk into the chocolate mixture. Combine well, then pour the mixture back in the pan.
