INGREDIENTS

• 2 x250g Cherry Tomatoes

• 2 tablespoons olive oil

• 6 slices baguette French/Italian bread

• 200g mozzarella

• Basil leaves

•Parsley leaves

METHOD

  • 1. Preheat oven to 1800C. Place tomatoes on a baking tray and drizzle with half the oil. Roast for 10mins or until tomatoes begin to collapse.
  • Meanwhile, spray bread with olive oil. Cook on grill until charred.
  • Spread bread evenly with pesto. Top with mozzarella and tomatoes. Drizzle with remaining oil. Season and then
    sprinkle with basil and parsley.
