Add a gourmet twist to an ordinary supper with these stuffed chicken fillets Time: 50 minutes Serves: 4


INGREDIENTS

• 4 chicken fillets

• 30ml olive or avocado oil, plus extra for brushing

• 2 garlic cloves, finely chopped

• Grated zest and juice of 1 lemon

• Salt and ground black pepper

• 1 red pepper, quartered

• 40ml basil pesto

• 60g Blue cheese, sliced

• 12 basil leaves
METHOD

1. Preheat oven on grill. Slice the chicken fillets open like you would a hamburger bun, careful not to slice right through. Combine the 30ml oil, garlic, lemon juice and zest in a glass bowl and season with salt and pepper. Marinate the chicken fillets for 30 min.

2. Brush the peppers with oil and roast in the oven until soft.

3. Remove the chicken from the marinade and spread the inside of each fillet with 10ml pesto. Stuff each fillet with a pepper quarter, a slice of cheese and 3 basil leaves. Secure the cute side of the fillet with 2 toothpicks.

4. Heat a griddle pan on medium- high. Brush each chicken sandwich with oil and grill for 8 minutes per side, or until the chicken is cooked through.
